Tuba is known by many different names across the globe. It is a palm wine made from the fermented flower sap of many species of palm trees. In order to make Tuba the palm flower is first tapped and the sap extracted. The sap begins fermenting almost immediately, and creates a sweet liquid ranging between 4-8% alcohol. Longer fermentation results in vinegar rather than a higher alcohol content. The wine may be distilled to create a stronger alcoholic beverage that can reach concentrations of up to 20 percent.
